Gluten-Free Cookies n’ Cream (OREO) Sugar Cookie Bars

Post Published Oct. 20, 2026

If you’ve ever looked at a package of Oreos and thought, “These would be even better if I put them in a cookie, covered that cookie in frosting, and then added MORE Oreos,” then I think we’re going to get along just fine.

Because that’s pretty much exactly what these Gluten-Free Oreo Sugar Cookie Bars are.

We’re talking about a soft, buttery cookie bar packed with chopped gluten-free Oreos, topped with a thick layer of fluffy marshmallow buttercream, and finished with even more Oreo pieces scattered across the top. It's chocolatey, creamy, sweet, and pretty much everything you could want if you're the kind of person who always picks the Oreo dessert off the menu.

And yes, there are Oreos in the cookie base and on top of the frosting. I don't see a reason to apologize for that. 😤

The cookie layer of these bars is soft and tender, with little pieces of chocolate sandwich cookie throughout. Then you get to the frosting, which is where things get really good. It's a fluffy vanilla marshmallow buttercream that adds a creamy, sweet layer between the cookie base and all those extra Oreo pieces - They taste like your fav Oreo milkshake!!!

These are the kind of treats that look right at home on a dessert table, but they're also perfect for those days when you want to bake something fun without committing to a complicated, multi-layer dessert. They're familiar, easy to share, and guaranteed to catch the attention of anyone who loves chocolate sandwich cookies.

An Oreo Sugar cookie, But Better

I love a good cookie bar because you get all the things you love about cookies without having to scoop individual portions onto a baking sheet. Everything bakes together in one pan, and you end up with a thick, sliceable dessert that's easy to serve.

But these aren't just plain sugar cookie bars with a few chocolate chips thrown in.

The cookie base includes chopped gluten-free Oreos, so you get little pockets of chocolate cookie and sweet creme filling throughout the buttery dough. Every bite has a slightly different ratio of cookie, creme, and soft sugar-cookie-style base, which makes them even more fun to eat.

The cookie layer itself is sweet and buttery, with a little richness from cream cheese. That cream cheese helps give the bars a tender texture and adds a subtle tang that balances the sweetness. You probably wouldn't identify cream cheese as the main flavor when you take a bite, but it helps make the base taste a little richer and gives it a texture that's different and chewier when compared to a standard sugar cookie.

It's a pretty solid arrangement, if you ask me.

Why Stop at One Layer of Oreos?

This is probably a good time to mention that there are Oreos in the cookie bars and another generous helping on top.

Some people might consider that excessive.

Those people are welcome to make a different dessert.

For these bars, I wanted the Oreo flavor to be present throughout the entire thing rather than having the cookies serve as nothing more than a decoration. The pieces mixed into the base give you that chocolate sandwich cookie flavor in every bite, while the chopped Oreos on top add more texture and make it immediately obvious what you're about to eat.

The topping also gives the bars a little contrast. You have the soft cookie base, the fluffy frosting, and then those little chunks of chocolate cookie on top. It's sweet, creamy, chocolatey, and just a little bit crunchy in places.

And since the Oreos are roughly chopped rather than pulverized into crumbs, you get actual pieces of cookie instead of just a layer of chocolate dust. Not that chocolate dust is necessarily a bad thing. I just prefer having some chunks to bite into.

Let's Talk About That Marshmallow Buttercream

The frosting on these bars deserves its own conversation because plain vanilla frosting would certainly be good here, but marshmallow buttercream makes them a little more special.

This frosting combines butter, shortening, powdered sugar, vanilla, and marshmallow fluff to create a sweet, fluffy topping that pairs perfectly with the Oreo cookie base.

The butter gives it that familiar buttery flavor, while the shortening helps create a smooth, stable texture. The marshmallow fluff adds another layer of sweetness and gives the frosting that soft, marshmallow-like flavor that makes it taste a little different from traditional buttercream.

The cookie base is already sweet and buttery, and the Oreo pieces bring in plenty of chocolate flavor. The marshmallow buttercream adds a creamy layer that ties everything together without competing with the cookies. It also creates the perfect place for all those chopped Oreos on top to settle in.

And let's be honest, frosting is never a bad idea when it comes to cookie bars. A thick layer of buttercream makes an ordinary cookie bar feel like a bakery-style treat, and these definitely benefit from that extra layer of goodness.

These Are Perfect for Parties, Bake Sales, and Basically Any Occasion

Cookie bars are one of my favorite desserts to bring to gatherings because they're easy to serve and don't require much fuss once they're ready.

You can cut them into smaller squares for a dessert platter or make larger portions if you're serving them as the main treat. Either way, the frosting and Oreo topping make them look like something you'd find in a bakery.

They're great for birthday parties, holiday dessert tables, potlucks, bake sales, family gatherings, or any event where you need a dessert that people will immediately recognize and want to try.

They're also a fun option when you're baking for kids. Chocolate sandwich cookies and marshmallow frosting are not exactly a difficult sell, and the bars are easy to pick up and eat without needing a fork. Although if you want to put one on a plate and eat it with a fork, I fully support that, too.

These are also a good choice when you want something a little different from the usual brownies and chocolate chip cookies. They're still familiar flavors, but the frosting and Oreo topping make them feel more like a special bakery treat.

And because the recipe uses gluten-free ingredients, they're a fun addition to a dessert spread for people who need gluten-free options.

Just be sure to check the labels on all your ingredients and use products that meet your gluten-free needs!

Let the baking begin!

These Gluten-Free Oreo Sugar Cookie Bars with marshmallow buttercream are everything I want in a fun, sweet dessert. The cookie base is soft and buttery, the chopped Oreos add plenty of chocolate sandwich cookie flavor, and the fluffy marshmallow buttercream gives everything a creamy, sweet finish.

Then there's the extra layer of chopped Oreos on top, because apparently I decided that one layer of cookies simply wasn't enough.

And honestly? I'm happy with that decision.

They're familiar without being boring, sweet without needing a complicated filling, and fun to share with anyone who loves a good Oreo dessert.
