Gluten-Free Cinnamon Swirl Loaf w/ Vanilla Glaze

Post Published Oct. 16, 2026

There are few things better than the smell of cinnamon sugar baking in the oven. It's warm, sweet, a little buttery, and somehow makes your entire kitchen smell like you've got your life together. Even if there are dishes in the sink, laundry sitting in the dryer, and approximately seventeen other things you should probably be doing.

At least there's this Gluten-Free Cinnamon Swirl Loaf! 🤪

This gluten-free cinnamon swirl loaf with vanilla glaze is the kind of baked good that makes an ordinary morning feel a little more special. It's soft, buttery, and tender, with a thick ribbon of cinnamon sugar running through the middle and even more cinnamon sugar sprinkled across the top. Once it's cooled, the whole thing gets finished with a sweet vanilla glaze that drips into all those little cracks and crevices.

It's basically everything you love about a cinnamon roll, except in loaf form. And honestly, sometimes a loaf cake is exactly what you need when you're craving cinnamon rolls but don't necessarily feel like committing to the entire multi-day cinnamon roll situation.

No rolling dough, no waiting around for yeast, and no trying to convince yourself that making homemade cinnamon rolls on a random Tuesday morning is a perfectly reasonable use of your time. This loaf gives you those familiar cinnamon-sugar flavors in a simple, sliceable dessert that's just as good with your morning coffee as it is for an afternoon snack.

And because it's gluten-free, everyone who needs to avoid gluten can enjoy a slice, too.

The Cinnamon Swirl Is the Best Part

Let's be honest: the cinnamon swirl is what makes this loaf…I mean it’s quite literally in the name.

The cake/loaf part itself is buttery and lightly sweet, but that layer of brown sugar, white sugar, and cinnamon running through the center is what really makes every bite interesting. You get the soft cakey layer, then that concentrated pocket of cinnamon sugar, then more tender cake/loaf surrounding it.

It's the perfect amount of contrast without needing any extra fillings or fancy ingredients.

The filling uses both brown sugar and granulated sugar, which is one of my favorite combinations for cinnamon desserts. Brown sugar brings a deeper, almost caramel-like sweetness, while white sugar keeps the cinnamon mixture from becoming too heavy. Together, they create that classic cinnamon-sugar flavor that works in pretty much everything from cinnamon toast to coffee cake.

And then there's the cinnamon itself. One tablespoon might sound like a lot, but remember that it's spread throughout the filling rather than mixed into the entire loaf. That means you get a really noticeable cinnamon flavor right where you want it.

The extra cinnamon sugar on top is another little detail that makes this loaf so good. It gives the top an extra layer of sweetness and ensures that the cinnamon flavor isn't limited to the center. Every slice gets a little bit of that sugary goodness, which is exactly how it should be.

The Loaf Itself Is Soft, Buttery, and Tender

A good cinnamon swirl loaf needs more than a delicious filling. The cake/loaf surrounding it has to be good, too.

This one has a soft, tender crumb with a rich buttery flavor and just enough sweetness to balance the cinnamon sugar. It's not meant to be a dry, crumbly loaf that needs a giant cup of coffee to help you get through it. It's more like a cross between a classic loaf cake and a cinnamon coffee cake, with a texture that makes you want to go back for another slice.

The butter gives it that familiar homemade cake flavor, while the small amount of vegetable shortening helps contribute to a tender texture. Using both might seem a little unexpected, but they each bring something useful to the recipe.

Then there's the sour cream. Sour cream is one of those ingredients that doesn't always get the attention it deserves in baking. It adds moisture, richness, and a subtle tang that helps balance the sweetness. You won't take a bite and think, "Wow, I can really taste the sour cream." Instead, you'll notice that the cake is soft, flavorful, and has that lovely texture you want from a loaf like this.

It's a small ingredient that makes a noticeable difference.

Why Brown Sugar Belongs in the Cake Batter, Too

The cinnamon swirl gets plenty of attention, but the brown sugar in the loaf itself deserves some credit.

Using both granulated sugar and brown sugar adds a little more depth to the cake than using white sugar alone. Brown sugar has a warm, almost molasses-like flavor that works beautifully with cinnamon, vanilla, and butter. It gives the loaf a more rounded sweetness without making the cake taste overly sugary.

It's also what makes the flavor of the cake work so well with the filling. Instead of having a plain vanilla cake with cinnamon sugar dropped in the middle, you get a loaf where all the flavors complement each other.

The vanilla helps bring everything together, too. It's not the main flavor here, but it adds a little warmth and makes the cake taste more complete.

The flavor profile is similar to our Cookie Dough Loaf Cake!! 🙂‍↕️

The Vanilla Glaze Is Nonnegotiable 😤 (jk…sort of)

Could you eat this loaf without the glaze? Sure.

Would I recommend it? Not if you have powdered sugar sitting in your pantry.

The vanilla glaze is the finishing touch that takes this from a cinnamon-swirled loaf cake to something that looks like it belongs behind the glass at a bakery. It's sweet, smooth, and just thick enough to leave those pretty white ribbons across the top.

The vanilla adds a little extra flavor without competing with the cinnamon, and the buttery glaze complements the richness of the cake. It also creates a nice contrast against the darker cinnamon sugar on top. There's something about a glaze that makes a baked good feel finished. Even the simplest loaf cake looks a little more special with a drizzle of icing running across it.

And let's be honest, the glaze is also responsible for those little bites where you get cake, cinnamon sugar, and icing all at once. Those are the bites you're hoping for when you cut yourself a slice.

Plus, a loaf cake with icing stripes looks impressive enough to serve to guests while still feeling completely appropriate to eat straight off a cutting board in your kitchen.

Both situations are encouraged.

Is It Breakfast or Dessert?

This is where things get a little complicated.

On one hand, it's a sweet loaf cake with cinnamon sugar and vanilla glaze. That sounds like dessert to me. On the other hand, it pairs beautifully with coffee, makes a great addition to a brunch spread, and is absolutely something I'd happily eat for breakfast.

So I think we can agree that it's versatile.

You can serve it alongside a cup of coffee on a slow weekend morning, put it out for brunch, bring it to a family gathering, or save a few slices for an afternoon treat. It's also a lovely option when you want to bring someone homemade baked goods without making an entire layer cake or a batch of cupcakes.

There's no frosting to pipe, no individual portions to decorate, and no need to make a big production out of serving it. Just slice and enjoy.

And if someone asks why you're eating cake for breakfast, you can point out that there's cinnamon involved. That's basically a breakfast ingredient.

I'm sure there's a perfectly reasonable argument in there somewhere 😀

Let the baking begin!

TIPS AND TRICKS:

- Always preheat your oven.

- All refrigerated ingredients should be room temperature unless stated otherwise.

- Be sure to spoon and level your gluten-free flour.

- The cinnamon sugar topping forms a thin crust as it bakes. This is supposed to happen!

This gluten-free cinnamon swirl loaf with vanilla glaze is one of those recipes that proves you don't need an elaborate dessert to make something really delicious. It's soft, buttery, and full of cinnamon sugar, with a tender cake surrounding that sweet swirl in the center. The extra cinnamon sugar on top gives it even more flavor, and the vanilla glaze brings everything together with just the right amount of sweetness.

It's familiar in the best possible way. The kind of baked good that reminds you of cinnamon coffee cake, homemade cinnamon bread, and those little bakery treats you always seem to want when you're picking up coffee.

Whether you're making it for a weekend breakfast, a holiday brunch, an afternoon snack, or simply because you have a serious cinnamon craving, this loaf is a great one to have in your collection.
