Gluten-Free Creamy Lemon Crumb Bars
Post Published June. 17, 2026
If you're the kind of person who sees a lemon dessert and immediately wants to know what it is, these gluten-free creamy lemon crumb bars are for you.
They're bright, buttery, creamy, and packed with fresh lemon flavor, all tucked between a soft lemony base and a generous layer of buttery crumbs. The finished bars get a simple dusting of powdered sugar before they're chilled, which makes them look almost too pretty to eat.
Almost.
These bars have everything I want in a summer dessert. They're sweet, but the fresh lemon juice keeps them from feeling too heavy. The filling is creamy and smooth, while the bottom layer is soft and tender. Then you get those buttery crumbs on top that add just enough texture to make every bite interesting.
And because they're made in an 8x8 pan, they're the perfect little batch when you want something homemade without ending up with enough dessert to feed an entire neighborhood.
Although, considering how quickly these disappear, maybe doubling the recipe wouldn't be the worst idea.
So, What Are Creamy Lemon Crumb Bars?
Think of these as a cross between a lemon bar, a crumb cake, and a really good bakery-style dessert.
But don't worry—they aren't complicated.
The bottom layer is a soft, buttery lemon cake-like base made with butter, cream cheese, sugar, lemon zest, and a little vanilla. On top of that goes a creamy lemon filling made from sweetened condensed milk, fresh lemon juice, lemon zest, and sour cream. Then everything gets covered with buttery crumbs and baked again.
Once the bars cool completely, they're dusted with powdered sugar and refrigerated before serving. The result is a bar that's soft and creamy in the middle, slightly chewy and tender on the bottom, and crumbly on top. Basically, there is a lot of texture happening in one little square.
And that's exactly why they're so good.
The Lemon Flavor Is Everywhere
There are plenty of lemon desserts that technically contain lemon but don't actually taste all that lemony.
That is not what we're doing here. This recipe uses lemon zest in both the bottom layer and the filling, along with a generous amount of fresh lemon juice.
The lemon zest in the bottom layer gives the base a fresh, fragrant lemon flavor, while the lemon juice in the filling brings that bright, tangy flavor that makes you immediately know you're eating a lemon dessert.
And because we're using fresh lemon juice rather than bottled, the flavor is especially fresh. If you're making these during the summer when lemons are constantly finding their way into your grocery cart anyway, this is a pretty great way to use them.
A few lemonY tips 🍋:
Zest the lemons before you juice them. Trust me, it's much easier.
Only zest the bright yellow part of the peel. The white pith underneath can be bitter.
Use fresh lemon juice for the filling.
Don't skip the lemon zest. It adds a much stronger lemon flavor than juice alone.
If you really love lemon desserts, use a little extra zest as a garnish along with the powdered sugar.
The Soft Lemon Bottom
The bottom layer is one of my favorite parts of these bars.
It's made with butter, cream cheese, sugar, lemon zest, vanilla, egg, gluten-free flour, salt, and cornstarch. The cream cheese is especially important here because it gives the base a little extra richness and tenderness while adding just enough tang to complement the lemon.
It's not a cheesecake layer. It's not a traditional cookie crust.
It's somewhere in between a soft cake-like base and a tender cookie bar.
And it works really well with the creamy lemon filling sitting on top.
The Creamy Lemon Filling
Now we get to the part that really makes these bars special.
The filling is made with just four ingredients:
Sweetened condensed milk
Lemon zest
Fresh lemon juice
Sour cream
That's it.
No complicated custard.
No tempering eggs.
No standing over the stove wondering if you're about to accidentally scramble something.
Easy peasy, lemon squeezy 😆🍋
The Crumb Topping
If you have a weakness for crumb toppings, you're going to love these.
The crumb mixture is made with gluten-free flour, cornstarch, brown sugar, sugar, baking powder, salt, cold butter, and vegetable shortening. The mixture goes into a food processor and gets pulsed until the butter and shortening are incorporated and the mixture resembles sand.
Then comes the fun part. Take a little of the mixture in your hand and squeeze it.
If it holds together, you've got the right consistency. You can then break it into crumbs of different sizes. Some small. Some big. Some somewhere in the middle. You don't need perfectly uniform crumbs.
Actually, please don't try to make them perfect.
The uneven pieces are what give the finished bars that homemade, bakery-style look.
Let the baking begin!
TIPS AND TRICKS:
- Always preheat your oven.
- All refrigerated ingredients should be room temperature unless stated otherwise.
- Use fresh lemon juice! It makes a huge difference in the taste!
- Line the bottom AND sides of your pan with parchment paper to ensure nothing sticks and you have an easy removal.
These Gluten-Free Creamy Lemon Crumb Bars are bright, buttery, creamy, and packed with fresh lemon flavor.
The soft lemon-infused bottom gives the bars a sturdy but tender base, while the sweetened condensed milk, lemon juice, lemon zest, and sour cream create a creamy filling that's sweet, tangy, and incredibly smooth.
Then you get the buttery crumb topping, which adds just the right amount of texture before everything gets finished with a dusting of powdered sugar.
They're simple enough to make without turning your kitchen into a disaster zone, but pretty enough to serve at a party. And the fact that they need to be refrigerated before serving makes them especially perfect for summer.
So if you're looking for a dessert that's very lemony, creamy, buttery, and just the right amount of crumbly, put these on your list. Just remember to let them cool. Refrigerate them. And maybe hide a couple before everyone else realizes how good they are.
Because once people start cutting into that 8x8 pan, you may want to act quickly.
