Gluten-Free Banana Bread

Do you have any extra ripe bananas laying around? If you do, then it's a good day to make banana bread. It's a simple classic that everyone loves. I've made a lot of banana bread over the last few years. After trial and error, I came up with this recipe and it's my favorite by far. It can be enjoyed any time of day; from morning with coffee to an afternoon with tea. This bread is soft, moist, and bursting with banana flavor. It's quick and easy because it mixes up in no time. So, start mashing those bananas! It's time to make the best banana bread you'll ever have.

Banana bread is something that doesn’t ever go out of season. It doesn’t matter if you’re stuck in the house from a huge blizzard or planning a springtime picnic, banana bread is the perfect addition to any day or event. My favorite way to enjoy it is on a cold winter day - I lightly warm a slice of gluten-free banana bread in the toaster, spread a super thin layer of smart balance on it, and then sprinkle a tiny bit of cinnamon sugar over the top…pure perfection!

Gluten-Free Double Chocolate Muffins

I’ve been known to crave a piece of chocolate cake for breakfast, but, obviously, that’s not one of the smartest or healthiest options in the world. So, I decided to create these Gluten-free Double Chocolate Muffins so I can satisfy that persistent chocolaty craving - These muffins are moist, tender, and perfectly rich and chocoalty. The best part about these muffins is that they won’t give you a sweetness-overload-induced stomach ache like a big piece of chocolate cake would!

There’s really nothing better than a chocolate muffin for breakfast! Especially a moist, bakery-style muffin. Typical chocolate muffin recipes tend to be dry due to the drying properties of cocoa powder, but these muffins are quite literally the exact opposite. These muffins are perfect to bake for holiday morning, a chocolate-lover’s birthday, or breakfast in bed for someone you love!

Here is when these muffins come into play. They are quick, easy, and mix up in a few minutes. The few extra minutes you take to make these muffins will be WELL WORTH IT!! They’re so soft and fluffy, it’s like biting into a cinnamony cloud.

These muffins are made with oats, sweet raisins, and sprinkled with cinnamon sugar, so it’s like a cinnamon roll meets an oatmeal raisin cookie…but in muffin form. It’s the perfect franken-muffin! Gluten-free Peanut Butter Easter Eggs

For these Peanut Butter Easter Eggs, I decided that I would make it a mission for myself to make them as similar as I could to a Reese's Egg because they aren't gluten-free. I wanted to eliminate some of the sugar that is usually in traditional eggs because they are sometimes way too sweet. So, I added a tiny bit of salt and butter and cut the powdered sugar down by a ton. You can dip them in chocolate the traditional way, but I got a silicone egg mold from Amazon to make them look a little bit fancier!

Gluten-free Walnut Buttercream Thumbprints

These Gluten-Free Walnut Buttercream Thumbprints are the most requested cookie in our house all year long, not just Christmas time. The cookie base is not too sweet, so the addition of the walnuts that toast while they bake and the smooth vanilla buttercream balance everything out so nicely. Not only do these elements give these cookies an outstanding flavor, but a wonderful texture as well.

There really is nothing more Christmas-y than toasted nuts and sweet cookies. These cookies give you the best of both worlds all in one bite. I have no doubt that people will be asking you for the recipe once they try one of these beautiful creations; I know because it happens every year to me! The second best part about these cookies is that they’re extremely simple to make and only require a few ingredients that you have around the house. Simple and tasty - there’s nothing better.

Gluten-free Chocolate Hermits

These cookies are a Christmas staple in our house. We always have to make a double or even a triple batch just so we don’t run out by the time the holiday finally comes around! Now, these cookies may look super rich, but they’re surprisingly light and feel like a brownie in your mouth. The chocolate chips scattered in the dough give a light crunch to contract against the smooth icing on top. The chocolate sprinkles are optional, but they add another nice texture.

Some advice: I would definitely make a double batch like we do because these cookies disappear very quickly. First, you’ll try one, and sneak another, and then decide that since you’ve already had two, why not have a third? These Gluten-Free Chocolate Hermits are so addictive, you’ll never get enough of them!

I've been making chocolate chip muffins for as long as I can remember. They were always a family favorite. When I went gluten-free I knew I would have to come up with a chocolate chip muffin that was gluten-free, but didn't taste gluten-free. After trial and error, along came these muffins. I like them so much that they became my base recipe for creating my other muffin flavors. These muffins are deliciously sweet and bursting with chocolate chips -- enough to get a bunch in every single bite. I bet these will become a family favorite in your home as well.

Gluten-free Veggie Dip

We love this veggie dip in my family. We have it all the time: holidays, cookouts, get-togethers, or whenever we feel like filling up on lots of veggies. It's just so good that it's irresistible.

This dip is a winner all around. First, it's the best tasting dip around. It's the kind of thing you can't stop eating. Second, it's SUPER quick and easy to make. Just 4 ingredients mixed together and you're ready to go. Third, it's enough dip to satisfy a large crowd. The recipe makes 3 cups of dip; Enough to please all of your friends and family an still have some left over. Fourth, it stays fresh for days. The flavor is actually better the second day. Fifth, this dip is a bit different when compared to other veggie dips; Most dips we've have seen seem to be ranch based, but this veggie dip is made with italian dressing mix. A nice change of pace, we think. Sixth, this dip has a secret ingredient - cottage cheese. It adds a wonderful flavor and is a great way to cut the heaviness of the mayonnaise and sour cream.
