Breakfast cookies are a great way to start the day. They're like a bowl of oatmeal in a cookie form! These breakfast cookies are the first thing I created when I went gluten-free. I wanted something in the morning that wasn't overly sweet and would fill me up until lunch time. So, I got to work and after some trial and error I came up with these.

These breakfast cookies are soft, moist, not too sweet, and made with lots of healthy ingredients like peanut butter, oats, ground flax, applesauce, raisins, and chocolate chips. Added bonus - they stay fresh for days; no dried up, crumbly cookies here. I've come up with lots of variations sp there's something for everyone. What I have so far is original, walnut, chocolate chip, lemon blueberry, and banana nut. The possibilities are endless! You can stick with my combos or create your own with your favorite oatmeal add-ins.
